Nettle Cheese Pie


Once or twice (if I'm lucky!) every spring, I get nettles in my produce box.  This isn't one of those veggies that features in a lot of daily diets any more, so the first time I got them spawned a flurry of recipe searches, trying to figure out what in the world to do with them.  I've made pesto (amazing), pizza (good, but not enough of a showcase), and soup (fairly traditional, from what I can tell).  This year, I tried a Nettle Cheese Pie recipe from this awesomely named blog and it is the hands-down winner.  Beats the stuffing out of all the rest of them.  It made the house smell glorious, was tasty the first night, as leftovers, and cold straight out of the fridge. The leftovers disappeared in near-record time, which is a goal every cook should aspire to, right?



The only problem is....



....nettles won't be in my veggie box again for another year.  *sniffle*
